Jerry's Chicken and Green Chilies Lasagna
One of our kids childhood friends Jerry posted this really good looking recipe and I ask him to send it and he did.
Ok...here is it:
3 jars of prepared alfredo sauce,
3 little cans green chilies (don't drain them),
three cans of chicken (I use Tyson),
one medium sized onion,
one 8cup package of mozzarella cheese,
and shredded parmesan cheese,
box of lasagna noodles.
Get the pasta sheets boiling in super salty water. while the pasta cooks cut the onion into a small dice and soften it in one 2 tablespoons of extra virgin olive oil over medium heat (about 7-8 minutes).
Add a little salt and pepper. The salt will help the onions soften.
While that works open the chicken and drain them completely.
Add the chicken to the skillet along with the chilies in juice and heat through.
Next add the 3 jars of alfredo sauce and heat to a simmer.
Preheat oven to 400 degrees.
In a lasagna dish or deep casserole dish (sprayed with nonstick spray) place a little of the sauce in the bottom and lay some of the lasagna sheets down to form a layer, add more sauce on top (up to you on this...less sauce makes a denser lasagna), then mozzarella and sprinkle with parmesan.
Continue making layers until the dish is full. Be sure that your top layer is mozzarella and parmesan. Next tear off a sheet of foil and spray the side that will touch the top of the lasagna. Make sure it is sealed well and bake for 45 minutes covered and 15 uncovered to brown.
If it doesn't brown leave for 10 more minutes. Take it out and let it set for 10 minutes uncovered. Serve and enjoy!
