Farmer's Market Surprise
I went to the local Saturday morning Farmer's Market
and found the most delightful surprise!
My husband's two favorite things...
chocolate chip cookies and cinnamon rolls.
OMG...they are homemade morsels of yummy goodness.
The Mennonite lady and her two young daughters selling them
also had loafs of bread, dinner rolls, pies and other stuff.
I knew right away I did not bring enough cash with me.

Grace in the Sink
My daughter sent me these photos of the grandkitty, Grace.
My daughter SWEARS that I taught Grace how to get in the sink!

Grace jumped up in the sink the first time all on her own.
She was trying to turn on the faucet to get a drink.
I did turn on the faucet so she could get a drink.
My daughter says I spoiled her cat.

Scalloped Potatoes
Scalloped Potatoes
My daughter uses the slicer on her grater to make really thin slices of potatoes when she makes scalloped potatoes. She says this allows them to cook faster. She sprays her baking dish and layers potatoes, grated cheddar cheese, thinly sliced onions and then tops the whole thing with a can of cream of mushroom soup mixed with a 1/2 can milk, garlic powder, onion powder, accent, lemon pepper and seasoning salt. It is a simple dish to make. She bakes it at 350 degrees for about 45 minutes.

Making their Olympic debuts the three Oklahoma Thunder basketball players helped the TEAM USA MEN'S BASKETBALL TEAM WIN THE OLYMPIC GOLD METAL! How proud we are of Team USA and our Oklahoma Thunder players!!!
Kevin Durant scored 30 points and LeBron James scored five critical points down the stretch as Team USA repeated as Olympic champions on Day 16, beating Spain 107-100.
It was Team USA's 14th gold medal, a record in men's hoops, and it was the second straight triumph over Spain in the Olympic final.
Pau Gasol led Spain with 24 points, but the USA turned a one-point lead after three into another gold medal by outscoring Spain 25-18 in the fourth.

Hummingbird Cake
Long ago a lady I worked with would make this cake...I loved it, but had not thought about it in years. I get daily e-mails from Recipe Lion and this awesome cake recipe was there!! I was pretty excited to see it. I still don't know why it is called Hummingbird Cake?

There's nothing more delicious than homemade southern cake recipes. This tasty layered cake is made with crushed pineapple, bananas and pecans and, here's the best part, topped with a cream cheese frosting.
Ingredients
- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3 eggs, beaten
- 1 cup vegetable oil
- 1 1/2 teaspoons vanilla extract
- 1 can (8-ounces) crushed pineapple, undrained
- 1 cup pecans, chopped
- 2 cups bananas, chopped
- 1/2 cup pecans, chopped
- For the Frosting:
- 1 (8-ounces) package of cream cheese, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup butter
- splash of half and half
Instructions
For the Cake:- Preheat oven to 350 degrees F.
- Combine flour, sugar, salt , baking soda, and cinnamon in a bowl. Add eggs and oil. Stir until dry ingredients are moistened. DO NOT beat. Stir in vanilla, pineapple, 1 cup pecans and bananas.
- Pour batter into 3 greased and floured 9-inch round cake pans.
- Bake at 350-degrees for 25 to 30 minutes or until tooth-pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans and let cool completely on wire racks.
- Spread Cream Cheese Frosting between layers and on top and sides of cake, then sprinkle 1/2 cup chopped pecans on top. Store in refrigerator. Makes one 3-layer cake.
- Mix all of the ingredients, except powdered sugar and vanilla, with electric mixer until smooth and fluffy.
- Add powdered sugar and vanilla. Add enough half & half or milk to mix to spreading consistency.

Redneck Dream Catcher

Baking Soda
Health Related Uses
1. Use it as an antacid.2. Use it as underarm deodorant by applying it with a powder puff.
3. Mix half a teaspoon with peroxide paste and use it as toothpaste.
4. Use it as a face and body scrub.
5. Add a cup to bathwater to soften your skin.
6. Relieve skin itch from insect bites and pain from sunburn.
7. Remove strong odors from your hands by rubbing them with baking soda and water.
8. Put two tablespoons in your baby’s bathwater to help relieve diaper rash.
9. Apply it on rashes, insect bites, and poison ivy irritations.
10. Take a baking soda bath to relieve skin irritations.
11. Heartburn? Take a teaspoon of baking soda mixed with one-half glass of water.
12. Freshen your mouth by gargling half a teaspoon of baking soda mixed water.
13. Relieve canker sore pain by using it as mouthwash.
14. Use it to relieve bee stings.
15. Use it to relieve windburns.
16. Apply it on jellyfish sting to draw out the venom.

The best thing about baking soda is that it’s very cheap. You can do all these things for a very small cost. Baking soda is truly a miracle product, whether it’s used for baking or not.

Eggplant with Pasta
I have been looking for recipes using EGGPLANT and found this recipe in my e-mail. I subscribe to diabetic living on line and they have some very good recipes to get you out of the everyday rut of making the same things over and over.

Tender chunks of eggplant take the place of ground beef or sausage in this vegetarian pasta sauce recipe, which is made in your slow cooker.

Diabetic Exchanges
- 1 medium eggplant
- 1 medium onion, chopped
- 1 28 ounce can Italian-style tomatoes, cut up, undrained
- 1 6 ounce can Italian-style tomato paste
- 1 4 ounce can (drained weight) sliced mushrooms, drained
- 1/4 cup dry red wine or beef broth
- 1/4 cup water
- 2 cloves garlic, minced
- 1 1/2 teaspoons dried oregano, crushed
- 1/2 cup pitted kalamata olives or pitted ripe olives, sliced
- 2 tablespoons snipped fresh parsley
- Salt
- Ground black pepper
- 4 cups hot cooked penne pasta
- 1/3 cup grated or shredded Parmesan cheese
- 2 tablespoons pine nuts, toasted (optional)
1. Peel eggplant, if desired; cut eggplant into 1-inch cubes. In a 3-1/2- to 5 1/2-quart slow cooker, combine eggplant, onion, undrained tomatoes, tomato paste, mushrooms, wine or broth, the water, garlic, and oregano.
2. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours.
3. Stir in olives and parsley. Season to taste with salt and pepper. Serve over pasta with Parmesan cheese. If desired, garnish with toasted pine nuts.

Stroke
Stroke is a medical emergency and the third leading cause of death in the U.S. It occurs when a blood vessel in the brain bursts or, more commonly, when a blockage develops. Without treatment, cells in the brain quickly begin to die. The result can be serious disability or death. If a loved one is having stroke symptoms, seek emergency medical attention without delay.
Stroke Symptoms
Signs of a stroke may include:- Sudden numbness or weakness of the body, especially on one side.
- Sudden vision changes in one or both eyes, or difficulty swallowing.
- Sudden, severe headache with unknown cause.
- Sudden problems with dizziness, walking, or balance.
- Sudden confusion, difficulty speaking or understanding others.
Stroke Test: Talk, Wave, Smile
The F.A.S.T. test helps spot symptoms. It stands for:Face. Ask for a smile. Does one side droop?
Arms. When raised, does one side drift down?
Speech. Can the person repeat a simple sentence? Does he or she have trouble or slur words?
Time. Time is critical. Call 911 immediately if any symptoms are present.
Stroke: Time = Brain Damage
Every second counts when seeking treatment for a stroke. When deprived of oxygen, brain cells begin dying within minutes. There are clot-busting drugs that can curb brain damage, but they have to be used within three hours of the initial stroke symptoms. Once brain tissue has died, the body parts controlled by that area won't work properly. This is why stroke is a top cause of long-term disability.Diagnosing a Stroke
When someone with stroke symptoms arrives in the ER, the first step is to determine which type of stroke is occurring. There are two main types, and they are not treated the same way. A CT scan can help doctors determine whether the symptoms are coming from a blocked blood vessel or a bleeding one. Additional tests may also be used to find the location of a blood clot or bleeding within the brain.Ischemic Stroke
The most common type of stroke is known as an ischemic stroke. Nearly nine out of 10 strokes fall into this category. The culprit is a blood clot that obstructs a blood vessel inside the brain. The clot may develop on the spot or travel through the blood from elsewhere in the body.Hemorrhagic Stroke
Hemorrhagic strokes are less common but far more likely to be fatal. They occur when a weakened blood vessel in the brain bursts. The result is bleeding inside the brain that can be difficult to stop.'Mini-Stroke' (TIA)
A transient ischemic attack, often called a "mini-stroke," is more like a close call. Blood flow is temporarily impaired to part of the brain, causing symptoms similar to an actual stroke. When the blood flows again, the symptoms disappear. A TIA is a warning sign that a stroke may happen soon. It's critical to see your doctor if you think you've had a TIA. There are therapies to reduce the risk of stroke.What Causes a Stroke
A common cause of stroke is atherosclerosis -- hardening of the arteries. Plaque made of fat, cholesterol, calcium, and other substances builds up in the arteries, leaving less space for blood to flow. A blood clot may lodge in this narrow space and cause an ischemic stroke. Atherosclerosis also makes it easier for a clot to form. Hemorrhagic strokes often result from uncontrolled high blood pressure that causes a weakened artery to burst.Risk Factors: Chronic Conditions
Certain chronic conditions increase your risk of stroke. These include:- High blood pressure

- Diabetes
- Obesity
Risk Factors You Can't Control
Some stroke risk factors are beyond your control, such as getting older or having a family history of strokes. Gender plays a role, too, with men being more likely to have a stroke. However, more stroke deaths occur in women. Finally, race is an important risk factor. African-Americans, Native Americans, and Alaskan Natives are at greater risk compared to people of other ethnicities.Stroke: Long-Term Damage
Whether a stroke causes long-term damage depends on its severity and how quickly treatment stabilizes the brain. The type of damage depends on where in the brain the stroke occurs. Common problems after a stroke include numbness in the arms or legs, difficulty walking, vision problems, trouble swallowing, and problems with speech and comprehension. These problems can be permanent, but many people regain most of their abilities.Life After a Stroke
More than half of people who have a stroke regain the ability to take care of themselves. Those who get clot-busting drugs soon enough may recover completely. And those who experience disability can often learn to function independently through therapy. While the risk of a second stroke is higher at first, this risk drops off over time.
