Toby Keith's OK Kids Korral - OKC

Toby Keith grew up in Moore, Oklahoma and now lives in Norman, Oklahoma, and besides his passion for the University of Oklahoma football team, Toby has been working through his foundation for a decade planning and fundraising to see his dream come true and the OK Kids Korral become a reality.
The mission of The Toby Keith Foundation is to encourage the health and happiness of pediatric cancer patients and to support OK Kids Korral.The Toby Keith Foundation has been helping children with cancer since 2006. Building up its mission, the foundation is spearheading the construction and operations of OK Kids Korral.
OK Kids Korral will provide a cost-free, convenient and comfortable home for pediatric cancer patients receiving treatment at The Children’s Hospital at OU Medical Center, Peggy & Charles Stephenson Cancer Center and other nearby facilities.
There is no greater gift than keeping families strong and together during a difficult time. If we can alleviate stress on a family, encourage a brother or sister and comfort a sick child, then we will make a difference in the fight against cancer.
Located near The Children's Hospital at OU Medical Center the OK Kids Korral is scheduled to open this fall. Thank you Toby!

Jalapeno Chicken with Bacon

Jalapeno Chicken Wrapped in Bacon
 

Prep time Cook time Total time

Chicken spread with cream cheese and jalapenos, rolled and wrapped with bacon, then grilled
Serves: 16 bite-size

Ingredients
  • 8 chicken tenders, flattened and cut in two
  • 3-ounce package softened cream cheese
  • 1 jalapeno pepper, seeded and finely chopped
  • 8 slices bacon, cut in half
Instructions
  1. Dab ½ teaspoon (more or less) of cream cheese on top of each chicken tender. Sprinkle a scant ¼ teaspoon of peppers over cream cheese. Fold or roll chicken to enclose cream cheese mixture. Wrap each roll with one piece of bacon and secure with a toothpick.
  2. Grill until bacon is brown and crispy on both sides. (can also be cooked in the oven)
 
Be sure to wear plastic gloves when handling fresh jalapenos. The oil will attach itself to your hands and is not easily washed away. An inadvertent swipe of the hand close to your eyes could be an unforgettable experience. For reference, if you are substituting for the chicken tenders (i.e. dark meat, large pieces of chicken breast, game meat), the size of the tenders used were 5-6 inches long and 2-3 inches wide before flattening and cutting in half. Try flattening meat inside a zip-lock bag. No flying pieces, no contamination on your cutting board from the chicken, and cleanup is super easy.

I pass this awesome store on the way to work everyday.
Whether you're looking to buy a Pendleton blanket, an authentic pair of beaded moccasins, baskets or supplies such as beads and hides, you're sure to find them at the Mohawk Lodge. This unique store was the first trading post in Indian Territory, opened in 1892 in nearby Colony as an outlet and beading house for the Cheyenne women to make and sell their handmade creations. The store was moved to its present location on Route 66 in 1940, and still buys, sells and trades authentic Indian crafts and artifacts across the same counter used in 1892. While visiting, be sure to view the original antique photos of Cheyennes and other museum-worthy treasures that have traded at the historic site over the past century.

When Nelson King spotted the abused and vandalized 1925 Clinton Country Club building, he saw potential. He didn’t know exactly what he would make of it at first, but he wanted to preserve the history of the area. King purchased the building in 2000 and today it’s open for business as the While Dog Hill Restaurant and has resumed its position as a central part of the community.

The clubhouse and nearby caretaker’s quarters were built out of native red sandstone in 1926. The private, nine-hole course that used sand greens closed about 1960. It served as a residence until its abandonment in 1983. It deteriorated into an illegal dump and as a haven for vandals for nearly 20 years, until Nelson acquired the property.
Located at 22901 Route 66 North, in Clinton, Oklahoma, which is now a frontage road of Interstate 40, the old Country Club had a colorful history and most importantly a magnificent view. Although the scenic view from the old country club was remarkable, King knew the view inside the structure, even though it had potential, could not be realized without a significant financial investment as well as many hours of hard work.
King completed all of the carpentry work himself, including replacement of windows and facings, replacing the flooring for the upper level, and adding support beams. King did utilize local electricians, heat and air personnel, plumbers and roofers to complete the project. Just weeks before the restaurant was due to open, King lost the new roof during a bad storm, and then had to delay the opening to have a second roof added to the structure with the addition of $30,000 in personal capital funds. Since that time, King hand-selected or constructed all furnishings and decor for this unique bistro to accentuate the exclusive characteristics of the old country club.
King uncovered original landscaping by noticing that bulbs came up in a star formation, which is now a part of the herb gardens that contribute to the unique cuisine of the White Dog Hill Restaurant. In addition, King also constructed walkways and patios around his unique eatery. Just down the path from the restaurant he has completed another building and turned it into a one-of-a-kind bar.

The Heartland of America Museum chronicles life in western Oklahoma by preserving historical artifacts and providing authentic and educational displays on the various aspects of life in the heartland. Featuring 12,000 sq ft of exhibit space, the museum showcases over 70 exhibits of items ranging from the Great Depression and WWI, to the Iraq War. Other displays include a drug store, music related items, toys, games, a one room schoolhouse, American Indian artifacts, historic cars, tractors, clothing, a telephone switchboard, phone booth, 1930s bedroom, blacksmith shop, an original Route 66 diner, portable jail, communication technology, patriotism and religion. This museum is a must see for anyone interested in the progression of America throughout the 20th century. The museum also offers wind turbine tours daily by appointment. The tour consists of a slide show presentation showing construction of a wind turbine unit from start to finish, a question and answer session, and a visit to a wind turbine site.
