Bananas

I sometimes grab a banana on my way out the door to work. It is a quick breakfast. Bananas have a mood-lifting power, in their combination of vitamins B6, A, and C; fiber; tryptophan; potassium; phosphorous; iron; protein; and healthy carbohydrates.
When you eat a banana, you get a quick boost from the fructose as well as sustaining energy from the fiber, which helps prevent a blood sugar spike. Carbohydrates aid in the absorption of tryptophan in the brain, and vitamin B6 helps convert the tryptophan into mood-lifting serotonin. Bananas are also a great source of potassium. Although potassium isn't directly related to mood, it is needed to regulate fluid levels and keep muscles working properly, which is important for feeling energized. Bananas also give us iron, which produces energy and fights fatigue. Bananas are available year-round and are easy to take along.

Bananas can be added into a variety of smoothies or made into many types of other dishes. I love to dip bananas in chocolate and freeze them....yummy!

Bobby Deen

Have you seen Bobby Deen's new show on the Cooking Channel or Food Network? It is a neat show where he takes his Mama Paula Deen's famous recipes and cuts out most of the calories while keeping the taste. It is a neat show! I found this bio info on the Cooking Channel site:
Growing up in a traditional Southern kitchen, self-proclaimed “Georgia boy” Bobby Deen went to work in that kitchen — his mother Paula’s kitchen — when he was 18. Bobby, now 41, has been an essential ingredient in the recipe that has made his mother an American hospitality and cooking icon. The warmth, humanity and kindness that are so much a part of Paula Deen’s persona are really family traits that were passed on to Bobby and his older brother, Jamie. As the family continues to cook, write and effectively welcome the world to sit in the kitchen and be a member of their family, Bobby maintains his own style, interests and passions.

But Bobby, after starting to lift weights, work out and master jujitsu with friends when he turned 30, has developed a new passion. He’s still a devoted sports fan, and he still plays the drums, something he started as a kid. Bobby continues to evolve and even picked up acoustic guitar, a craft he’s now devoted to learning.

Cards of Love

This month has been a little crazy around here! First my Mother had a stroke and spent a week at the Mayo Clinic. I was worried sick about her. Knowing how worried I was, my friend Pat from Arkansas made a connection with the Cards of Love group president Della Ivy Levan in California. I began receiving beautiful cards in the mail from people I did not know, but they noted my friend Pat had given them my information. It was so beautiful to open the mail box and find the cards.

Before the week was over we had attended the funeral of our dear friend Jim Williams (no kin, but a member of our extended family). Then we received word that our nephew Scotty Williams had been killed in a truck accident. I would not want anyone to have to attend a funeral on Saturday and another on Tuesday. Those cards really helped us during this difficult time. Bless all the ladies who took the time to send a card and write such encouraging words.

Lady Gaga Born This Way Foundation

I love it when celebrities use their fame to promote a project or create a foundation to help others. Lady Gaga may only be 25 year old, but she is setting an example for others with her new "Born This Way Foundation" with the name inspired by her hit song. I watched the news with her and Oprah talking about how she hopes to inspire young people.
With a little help from Oprah Winfrey and a few others, Pop singer turned philanthropist Lady Gaga formally and officially launched her “Born This Way Foundation” (Wednesday Feb 29) at Harvard University.


The newly launched foundation’s point of existence is to “challenge meanness and cruelty by inspiring young people to create a support system in their respective communities,” Gaga said.


Though bullying is a favorite cause of Gaga’s, the singer says that the BTW foundation wasn’t created to just fight bullying alone, but rather to empower youth and promote bravery.

Buffalo

These buffalo heads are mounted inside the lobboy of the Cherokee Restaurant on I-40 west of Oklahoma City. The Cherokee Restaurant serves buffalo burgers and other dishes made out of the extra lean meat. The Cherokee Restaurant on I-40 between Weatherford and Clinton has live buffalos in a pen near the restaurant. There are several locations in Oklahoma where live buffalo can be seen roaming in the pastures.
Oklahoma designated the buffalo as official state animal 1972. A bull buffalo can weigh over 1800 pounds and stand 6 foot tall at the shoulder. Buffalo once roamed the American prairie by the tens of millions and provided a way of life for the plains Indians. But European settlers hunted buffalo to the brink of extinction - it's estimated that between 300 - 500 animals remained when the federal government passed stricter game laws in 1889.
The buffalo is an inseparable part of American history; no other wild animal has played such a significant role in human affairs. The tribes of the American plains relied on bison for food, shelter, clothing, and as a powerful spiritual symbol.

E.S.Scotty Williams 1972-2012

This week has been sad for the Williams family. We lost our beloved nephew Scotty in a tragic auto accident. Scotty never met a stranger and he had over twelve thousand friends on his facebook. He never said anything bad about anyone and always pointed out the good about others when he heard a negative comment. Scotty was one-of-a-kind person who lit up the room with his smile and humor. He never left without telling us how much he loved us, and even though we were not there when he departed this earth, we feel his love around us.

Quote from Scotty:

by wanting what you don't have.
Remember what you have now
was once among the things you only hope for."

Scotty was the founder and field representative for the
X.R.A. - Ex Rodeo Association
we encourage everyone to join the X.R.A.
and keep his memory alive.

Smoked Sausage

One of our favorite things is Bar S Smoked Sausage. You have to watch the package, because they come in classic and hot. The hot is pretty hot! Like everything else in the grocery store today, the package has gone from 16 links to 14 links for around $5.00. Ticks me off that is only going from 31 cents to 36 cents per sausage link, but it is still a increase in the price. Seems like everyting I pick up is still the same price as before, but the package is smaller!
We still feel that they are a good value for the money, even with the price increase. We use these "big dogs" in so many different ways. I don't want to sound like Bubba in Forrest Gump, but these are a few of the ways we fix these Bar S Smoked Sausages:
Hot Dogs - they are as long as the bun
Cut up and cooked with barbecue sauce
Cut up and mixed in with mac and cheese
Cut up and put in baked beans
Cut up and added to an omelet or quiche
Split open and fried
Cooked with Sauerkraut
etc., etc., etc.

They can be served as the "main" meat dish or added to something to make a dish. Next time you are looking for something different try Bar S Smoked Sausages.

WHY My Husband Cooks!

A few weeks ago my Aunt and one of her friends came to visit. I got up early and put pinto beans and rice in the crockpot. I added lots of yummy seasonings. I was really hungry for rice and beans. This is what happened! It turned into one solid lump of nasty. My Aunt and I looked in the crockpot...I said this could be used to set a fence post, so she stood a knife up in my beans and rice and then nearly died laughing!!!

Cast Iron Casserole

My husband loves his new pot. It is a 5 quart covered oval porcelain enamel cast iron casserole pot. We have Paula Deen cookware and this pot just added to it. It is perfect for a pot roast and lots of other dishes. The cast iron really holds in the heat, ensuring that food remains hot. It is great for slow-cooking. The big loop handles are easy to get a hold of even with oven mits. It is also broiler safe. It is a pretty red pot with white inside. The label says "making memories one meal at a time" and that is exactly what we do!

Baked Spaghetti

Baked Spaghetti
This is a dish my daughter makes and sent me this photo and recipe.
You might want to cut the recipe down, because she makes two 9 X 13 pans.

Cook a package of Angel Hair Pasta
Brown 1 1/2 pounds Hamburger
Brown 1 pound Sausage
2 cans Spaghetti Sauce
2 cans tomatoes
Bag of Mini Pepperoni
Large container Cottage Cheese
2 cups Mozzarella Cheese Shredded
1 cup Colby Cheese Shredded
1 cup Cheddar Cheese
Sliced Provolone Cheese
Colby Jack Cheese Shredded for top

Mix meat, spaghetti sauce and tomatoes together.
Mix pasta, cottage cheese, mozzarella, colby, cheddar together.
Mix meat and pasta together.
Put 1/2 of mixture into pans.
Layer sliced provolone cheese on top of mixture.
Add the other 1/2 of meat and pasta on top of provolone cheese.
Sprinkle top with Colby Jack cheese.
Bake at 350 degrees for 30 minutes.

HAPPY ST. PATRICK'S DAY...this is my little Irish snowman I put out at my office each year. I sat him on my customer chair with my file cabinet as a background. I love my magnetic photo frames with my family on the file cabinet. 

I ask my husband for some of the Irish Limericks he is always saying...OH, not a good idea for my blog...seems as though he only learned the "tooooo colorful" ones!

While I was looking for good Irish Limericks I found this funny little story...Hope you enjoy...
‘Twas late one Saturday night, when the local Garda (police officer) spied Timothy O'Carroll driving in quite a meandering fashion along the streets of County Cork. After pulling him over, the policeman asked O'Carroll if he had been drinking that night.

“Who told on me?” asked Timothy.

“Well, so I have, occifer. So I have,” continued the thoroughly drunk O’Carroll. “It’s Saturday night, you know. Me and me lads, we made a stop by the pub, but I only had six or seven pints, that’s all.”

“But then they had somethin’ called ‘Happy Hour’ during which they served these delicious margaritos, or margaritas? Anyway they are quite good. I had four…no five of those. Then I had promised to drive O’Hara, me friend, home, and he invited me in. Well, I had to go in for a couple pints of Guinness. I really couldn't be rude, now occifer, Could I? Of course, on the way home I stopped to get another pint for later…”

At that point Timothy began fumbling around inside his coat and suddenly lifted up a bottle of whiskey for the Garda to inspect.

The policeman gave a deep sigh, saying “Sir, you will need to step out of the vehicle to take a breathalyzer.”

Indignantly, O'Carroll replied, “Why? Don't you believe me?”

Fried Dill Pickles

My husband made me some fried dill pickle slices!!! I love fried dill pickle slices.
He used a cup of flour, a package of Ranch Dip mix, pepper and pickles.
He just mixed the Ranch Dip mix and pepper in with the flour
and dipped the pickles in the mix.
Next he fried them in his cast iron skillet with a little bit of canola oil.
I remembered to take the photo after he had fried several,
so the excess flour in covering the bottom of the skillet.
(Sorry...I was eating the fried dill pickles.)
He took them out of the skillet and put them on a paper towel.
Some people dip them in ranch dressing and some put ketchup on them.
I just eat them!
This was the first time he had tried this recipe and it was GOOD!
He normally uses a mix of cornmeal and flour to put on the pickles.
He also uses regular dill pickle slices, but this time we had the ovals.

6 Secret Uses for Oranges

Use for kindling

Dried orange and lemon peels are a far superior choice for use as kindling than newspaper. Not only do they smell better and produce less creosote than newspaper, but the flammable oils found inside the peels enable them to burn much longer than paper.


Make a pomander

Pomanders have been used for centuries to fill small spaces with a delightful fragrance as well as to combat moths. They are also incredibly easy to make: Take a bunch of cloves and stick them into an orange, covering the whole surface. That’s it. Pretty simple, huh? Now suspend your pomander using a piece of string, twine, or monofilament fishing line inside a closet or cupboard, and it will keep the space smelling fresh for years.Simmer for stove top potpourri
Fill your abode with a refreshing citrus scent by simmering several orange and/or lemon peels in 1-2 cups of water in an aluminum pot for a few hours. Add water as needed during the simmering. This process freshens up the pot as well as the air in your home.


Keep kitties off your lawn
Are the neighbor’s cats still mistaking your lawn for their litter box? Gently point them elsewhere by making a mixture of orange peels and coffee grounds and distributing it around the cats’ “old haunts.” If they don’t take the hint, lay down a second batch and try moistening it with a bit of water.


Apply as mosquito repellent

If you’re not crazy about the idea of rubbing onions all over yourself to keep away mosquitoes, you may be happy to know that you can often get similar results by rubbing fresh orange or lemon peels over your exposed skin. It’s said that mosquitoes and gnats are totally repulsed by either scent.


Show ants the door
Get rid of the ants in your garden, on your patio, and along the foundation of your home. In a blender, make a smooth puree of a few orange peels in 1 cup warm water. Slowly pour the solution over and into anthills to send the little pests packing.

Sorrell Custom Cowboy Boots Guthrie, Oklahoma

Lisa Sorrell makes Custom Cowboy Boots in Guthrie, Oklahoma. I watched a story about her on Discover Oklahoma and was amazed at the art. Sorrell designs and builds each pair of custom made boots. It takes a month or longer for her to make each pair of boots that have a starting price of $3,500.00.

She grew up in Missouri and West Virginia, part of a conservative little church similar to a Mennonite church where the ladies all wear long hair and long dresses. Her mother began teaching me to sew when she was 12, and by 15, she was sewing professionally for the ladies in her church. At 20, she married her husband Dale and they moved from Missouri to Guthrie, Oklahoma, because that’s where he found a job.

After six months in a three room apartment, she got bored and answered an ad in the newspaper for 'stitching boot tops.' She had no idea what that was and had never worn cowboy boots. From there, Sorrell started to use her sewing skills in entirely new ways.

In March 2010, Sorrell won a gold metal for her “If We Make It Through December” boots in the very exclusive international competition, "Inter-Schuh Services (ISS 2010)," hosted by the Central Association of German Shoemakers. She was one of 50 selected entrants from around the world.

Buy fresh produce a week at a time: Buy fresh fruits and vegetables in bulk only if you will use them before they go bad. If you are able to get to the grocery store weekly, buy only enough fresh produce to last that week.

Cook with canned and frozen fruits and vegetables: Canned and frozen fruits and vegetables can be a good solution if you aren’t sure you’ll be able to use up fresh foods before they go bad. Bonus: they are often more affordable than fresh and can be even more nutritious.

Use up fresh vegetables before they go bad: Add vegetables to soups, stews, casseroles, pastas, sauces, or omelettes. Combine vegetables and a little salad dressing for a side dish or snack.

Transform leftovers into a new meal: Transform leftover mashed potatoes into a hearty soup by combining them with stock, a splash of vinegar, onions, carrots and any other veggies you have on hand. (I could live on the leftovers my kids toss! Grrrrrrr)

Stretch ingredients over multiple meals: Use ingredients more than once to save money and avoid food waste. Buying in bulk allows for stretching into individual meals...just repackage the bulk amount into smaller packages when you get it home. Add veggies to pasta or combine to make a mixed salad.

I was watching television one evening and they were interviewing Jessica Alba. She was talking about the company she co-founded after she had her children. The company Honest.com provided safe products for babies and delivered them to the clients doorstep! WOW...I was impressed and thought it was worth sharing the information with those of you who have babies or expecting them.
