My niece Debra loves to cook and studies lots of cooking methods.
This is French Style Scrambled Eggs she made for us.
First you start with a COLD non-stick pan.
Coat the pan with soft butter.
Add the eggs, salt and pepper.
Cook on low heat and stir until done.
Then add a tablespoon of butter and mix into the cooked eggs.
This takes longer than starting with a warm pan, but they are quite tasty.
