Chicken and Fresh Fruit Salad
My daughter sent me these photos and the recipe for making this wonderful main dish meal.
First you mix together 2 parts yogurt (she used strawberry yogurt) and 1 part mayo to make the dressing for the salad. After you mix the dressing put it in the frig to chill, while you make the rest of the salad.
Next you cook boneless skinless chicken breast in butter and season with Accent, Garlic Powder, and Lemon Pepper to taste. This is the daughter that never measures anything. She just adds the seasonings until it looks like she has enough. She is a really good cook.
While the chicken is cooking you slice up the fresh fruit of your choice.
My daughter used a pear, a peeled apple, seedless red grapes, Bing cherries, strawberries, banana and pineapple chunks. You also put in spinach leaves in with the fruit.
Tear up the chicken into pieces and add to the fruit and spinach leaves and toss.
The last step is to top with the yogart-mayo dressing.
This is a really awesome summer time salad to make when all the fruit is ready to eat.
